Fiddlehead ferns, found across Alaska, are young, delicate, tightly coiled tips of fern frons, only available in early Spring. They look like tiny scrolls popping out of the dirt. Alaskans make the most of a limited season and forage them to sell to farmer's markets that specialize in wild foods.
You wiil even hear Alaskans say, "oh, its fiddlehead time?" It's their way of being in tune with the season.
Green and subtly sweet cassis, green stems, hyacinth, and hints of pink fig appeal to a fresh and earthy forest palette.
